ginger nut biscuits – recipes in fewer words

No munchies for tonight’s telly watching? This recipe makes 16 biscuits. Do in two batches if you’ve no self control

  1. Set the oven to 180°C
  2. In a small bowl melt 50g butter with 30g to 50g sugar + 2 tablespoons golden syrup or honey
  3. In a bowl on the scales mix 100g self raising flour + 2 teaspoons ground ginger + 1 teaspoon bicarbonate of soda. Optionally add 1 tablespoon of grated ginger.
  4. Mix everything together to make a cookie dough to form into a perfect sausage / cylinder 30mm in diameter. (You can now fridge or freeze this for another day).
  5. Cut the cylinder in half and keep halving it till you’ve eight rounds. Space the dough blobs on a silicone tray, well separated and bake for 10 minutes.
