ginger nut biscuits – recipes in fewer words
No munchies for tonight’s telly watching? This recipe makes 16 biscuits. Do in two batches if you’ve no self control
- Set the oven to 180°C
- In a small bowl melt 50g butter with 30g to 50g sugar + 2 tablespoons golden syrup or honey
- In a bowl on the scales mix 100g self raising flour + 2 teaspoons ground ginger + 1 teaspoon bicarbonate of soda. Optionally add 1 tablespoon of grated ginger.
- Mix everything together to make a cookie dough to form into a perfect sausage / cylinder 30mm in diameter. (You can now fridge or freeze this for another day).
- Cut the cylinder in half and keep halving it till you’ve eight rounds. Space the dough blobs on a silicone tray, well separated and bake for 10 minutes.
